TOFU FRIED RICE 💚
Tonight’s dinner is an easy way of using up any cooked rice in the fridge. And with all the green veg and tofu, it’s a mega healthy, well rounded and impressive meal of total deliciousness 👌💯😍
Ingredients - serves 4
1 large block tofu, cubed
Sesame Oil
Tenderstem broccoli
2 tspn garlic and ginger paste
1 pack cavelo nero, chopped
Enough fresh or leftover rice for 4
1 cup frozen peas
1 cup frozen soya beans
3 tbspn soy sauce (possibly 1/3 dark and 2/3 light)
2 tspn sesame seeds
A red chilli, finely sliced
Method
- Pan fry the tofu in a little sesame oil until golden and crispy
- Wash and chop the tenderstem broccoli, adding it to the pan and continuing to fry until slightly softened before adding the garlic and ginger paste and stirring through
- Add the cavelo nero and cook until it has also softened and wilted
- Add the rice (I heat mine in the microwave first) and stir through
- Add the peas and soya beans- you can add them from frozen but again I heat them in a separate saucepan of boiling water for 3 or 4 minutes
- Mix the soy sauce/s together with the sesame seeds and a couple of tablespoons of water before pouring over the stir fried rice and stirring until all the rice is covered
- I cook for a few more minutes to allow some of the rice mixture to get crispy
- Divide between 4 bowls/lunch boxes, garnish with some fresh red chilli and enjoy ☺️
